Nice kicked up corn recipe

  • 1/4 cup chopped onion
  • 1/4 cup chopped green pepper
  • 1 tablespoon butter
  • 2 cups whole kernel corn
  • 1/4 cup diced tomatoes
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • cayenne pepper to taste
Preperation
  1. In a large saucepan, saute onion and green pepper in butter until tender. Stir in the corn, tomato, salt, pepper and cayenne. Cover and simmer for 5-10 minutes or until heated through, stirring occasionally.

Banana Pudding

We always have this dessert when our family gets together at the cabin.  Great dessert year round.

1 large pkg instant vanilla pudding, (6 ounces)
2 1/2 cups cold milk
1 can sweetened condensed milk, (14 ounces)
1 container whipped topping, (16 ounces)
sliced bananas
vanilla wafer cookies

Preparation:

Mix pudding and milk; add condensed milk. Blend well; fold in half the whipped topping. Alternate layers of pudding, bananas and vanilla wafers; I recommend placing the wafers end to end and not flat. Top with remaining whipped topping and a few banana slices.
Refrigerate overnight before serving.

Not your mom's meatloaf

Now, I must first admit, this is not my recipe, but it is very, very good.









1/2 pound bacon slices
1/2 pound ground beef (1)
1/2 pound ground pork (1)
2 eggs
1/2 cup Italian bread crumbs (2)
1/2 cup parmesan cheese
2 tablespoons mint – chopped
1/2 tablespoon garlic – minced
1 teaspoon salt and pepper — as needed
2 tablespoons parsley – minced
4 ounces prosciutto — sliced thin
4 ounces mozzarella cheese
4 ounces roasted red pepper – sliced
10 ounces spinach — cooked and drained (3)

Prepare the meat loaf mix:
Combine beef, pork, egg, breadcrumbs, cheese, mint, garlic and seasoning. Combine to form a smooth mix.
Lay out plastic wrap 24 inches by 24 inches. Lay slices of bacon side by side along the top of plastic wrap.
Spread the meatloaf mix on the bottom of the bacon. Sprinkle the mozzarella cheese on meat loaf mix then slices of prosciutto.

Sprinkle more cheese on top of the prosciutto. Spread the cooked spinach along the prosciutto slices. Arrange the pepper slices along the spinach. Season with salt and pepper.
Roll up the meat loaf into a spiral and wrap with the bacon. Use plastic wrap to wrap the log nice and tight. Season with black pepper.
Place on a greased baking pan and bake in a 350 degree oven to an internal temperature of 145 degrees about 30 minutes.
Remove from oven, cover loosely with foil and allow to rest 10 minutes
Slice into 12 slices.
Great with a fresh tomato sauce.

Chocolate Chiffon Cake

This is a fantastic Chocolate Chiffon Cake recipe that I have found simple, and very tasty.
     1 c. egg whites (7 or 8) 
1/2 c. sifted unsweetened cocoa, sift before measuring
3/4 c. boiling water
1 3/4 c. sifted cake flour, sift before measuring
1 3/4 c. sugar
1 1/2 tsp. baking soda
1 tsp. salt
1/2 c. salad oil
7 egg yolks
2 tsp. vanilla extract
1/2 tsp. cream of tartar
Preheat oven to 325 degrees. Place egg white in large bowl, set aside for 1 hour.
Place cocoa in small bowl. Add boiling water, stir until smooth. Let mixture cool about 20 minutes.
In
second large bowl sift flour, sugar, soda, and salt. Make a well in
center, pour in oil, egg yolks, vanilla and cooled cocoa. With spoon or
mixer beat just until smooth. Sprinkle cream of tartar over egg whites,
beat until stiff peaks form (do not over-beat). Pour batter over egg
whites.
Gently fold into egg whites until blended. Pour into
ungreased 10-inch tube pan. Bake 65 to 70 minutes. Let cool completely
before serving.
